Meat and noodle casserole is a very flexible recipe. Any type of meat and almost any vegetable can be used. Change the flavor of soup in this classic recipe and you can create a casserole that turns leftovers into a tasty meal.
Casseroles make excellent use of leftovers and other ingredients you have on hand. Putting together a casserole can challenge your creativity. The results can be gosh darn good.
Casserole recipes were popular in the 1950s partly due to lighter weight casserole dishes such as Pyrex. Many food companies put recipes on the packages containing their products. Soup companies and other food companies flooded women’s magazines with advertisements full of recipes promoting their products and many were for one pot meals. It seems America may never tire of casseroles.

Meat and Noodle Casserole
- 1 can any type of cream soup
- ½ cup of milk
- 2 cups of cooked egg noodles
- 2 tablespoons of onion, diced fine
- 1 cup of cooked vegetables
- 1 ½ cup of cooked meat or poultry, cut in cubes
- 2 tablespoon butter, more if needed
- 4 tablespoons or more of dry bread crumbs
Any type of meat can be used in the casserole as long as it has been cooked. Chicken, turkey, beef, pork or fish.
Combine soup and milk in a 1 ½ qt. casserole. Cook and drain the noodles. Stir the noodles, cooked vegetables, onion and the cubed meat. Into the soup and milk.
Bake uncovered in a 400 degree F oven for 25 minutes. Melt butter in a small sauce pan and stir in the bread crumbs. Cook until the crumbs are lightly browned. Remove the casserole from the oven and cover the top with the buttered crumbs. Return the casserole to the oven and bake another 5 minutes or until the topping as as brown as you want.
Cooked sweet peppers cut in dice or strips add flavor and color to the casserole. Olives, sliced green onions (you don’t need to cook these first), and hot peppers can also be added.
Seasoned bread crumbs can be used. Crushed dry cereal, potato chips or crackers can be used as a topping.
Seasoning can be whatever goes will with the type of meat you use. Stir in the seasonings with the soup and milk before adding the other ingredients. You can mix a few tablespoons of sour cream into the milk. You can use water or broth instead of milk.
Other types of condensed soups can be used depending on the type of meat and vegetables you have. Tomato works well with beef. Cream of mushroom and cream of chicken go well with poultry, pork and fish. Cheese soup is good with any meat and vegetable combination.
The casserole can be reheated in the microwave or in a 350 degree F oven until warmed through.
