Apple Cake

This recipe uses one of our favorite autumn fruits. Apple cake can be served as a coffee cake for breakfast or a weekend brunch. Warm and topped with ice cream it is a wonderful dessert.

The recipe will serve 8.


  • 2 large apples
  • ¼ cup of sugar
  • 2 teaspoons of cinnamon
  • 1 ½ cups of all-purpose flour
  • 2 teaspoons of baking powder
  • ¾ teaspoon of salt
  • ¼ cup of sugar
  • 1 egg
  • 3 tablespoons of cooking oil
  • ½ cup of milk
  • 1 teaspoon of vanilla
  • 4 tablespoons of butter
  • 5 tablespoons of all-purpose flour
  • 3 tablespoons of sugar
  • 2 teaspoons of cinnamon


Peel and core the apples. Slice in thin slices and put into a bowl, add ¼ cup of sugar and 2 teaspoons of cinnamon. Stir to combine and set aside while you make the cake.

Heat the oven to 350 degrees F. and butter or spray with pan release a 13x9x2 inch baking dish.

Mix the dry ingredients together in a large bowl. Mix the egg, oil, milk and vanilla together in another bowl. Add the liquids to the dry and blend, and then beat with a whisk or wooden spoon until smooth. Pour the batter into the baking dish.

Arrange the apples evenly over the top of the cake batter.

Combine the butter, sugar, flour and cinnamon in a bowl. Work together using a fork or pastry blender until you have a crumbly mixture. Sprinkle evenly over the apples.

Bake for 40 to 45 minutes or until the apples are tender and the cake tests done.

Serve warm or cold.


More cinnamon can be used. I am running low so I didn’t use as much as usual.

Pears would work in this recipe.

Leftovers of baked goods containing fruit should be refrigerated.
