Vegetable Packets

Cookout season is here again. These packets are tasty and easy to put together. You can make them up ahead of time and refrigerate.


  • 1/3 cup olive oil
  • 1 garlic clove, crushed
  • ½ teaspoon each salt and pepper
  • 4 slices of eggplant, ¾ inch thick
  • 1 large tomato cut in 4 slices
  • 4 slices of onion ¼ inch thick
  • 1 tablespoon grated Parmesan cheese


Mix the oil, salt, pepper and garlic together, set aside. Cut 4 18×8 inch pieces of aluminum foil. Place 1 slices of eggplant on each piece of foil. Brush each on both sides with the oil mixture. Top with 1 slice each tomato and onion. Drizzle with remaining oil mixture. Sprinkle with cheese. Bring up sides of foil and make double folds to seal. Grill 30 to 40 minutes turning often or bake in a 400 degree F. oven for 25 to 30 minutes. Cut packages open and serve in the foil.


The same method works well with other vegetables; potatoes, onions, peppers, broccoli, sweet potatoes, and celery to name a few. Fresh herbs can be added in the oil.

    I have never tried cooking foil packets before although I have seen different recipes. This one looks great!
