No summer cookout or dinner is complete without a large bowl of potato salad. It goes well with everything from hamburgers to hot dogs to brats to steaks. The salad is nice served alongside hot or cold sandwiches for a quick lunch.
Every region of the United States has its own versions. The Germans made potato salad that included crisp bacon or browned sausage along with onions and spicy brown mustard. The potatoes were cooked and then peeled with the seasonings added to the warm potatoes. Recipes from other areas of the country cool the boiled potatoes before making the salad and some boil them without the skins. I still make it the way my Mom did and use hot potatoes.
- 4 hard boiled eggs, sliced
- 4 slices of bacon, fried crisp and crumbled
- 2 lbs. potatoes, boiled in the skins
- Salt and black pepper to taste
- 1 large white or yellow onion, diced
- 1 cup mayonnaise, enough to moisten the salad
- 2 or more tablespoons dill or sweet pickle relish
- 1 tablespoon or more spicy mustard
Prepare the hard boiled eggs, cool and set aside. Fry the bacon and cool, then crumble. Set the bacon aside while you prepare the rest of the ingredients.
Put the potatoes in a large pan, add some salt and add water to cover by about an inch. Cook the potatoes over medium heat until a fork will pierce the largest one. Remove the potatoes from the heat and drain them in a colander. Use a tea towel to hold the hot potatoes and a paring knife to peel the skins from them. Chop the peeled potatoes into pieces about an inch or more in size and put into a large bowl.
Peel and chop the onion and add to the bowl with the potatoes. Add salt and pepper, mayonnaise, dill or sweet relish and the spicy mustard. Mix well then stir in the hard boiled eggs and the bacon.
The salad can be served right away or covered and refrigerated until needed.
Potato salad can be made using instant mashed potatoes. Make about 2 cups of mashed potatoes according to the directions on the box omitting the salt, butter and milk. You may need to add some extra potato flakes to stiffen the potatoes. Add the same ingredients as above but add the mayonnaise a couple spoons at a time at the last.
Some people add celery, cucumbers, radishes or green peppers to potato salad.
Browned sausages or cooked and sliced Polish sausages can be added.
