This is one of the few recipes I still use from the days when we nuked darn near everything. Another is English muffin bread although most of the time I bake it in the oven instead of the microwave. This is a highly addictive and easy to make candy that never lasts long. It is nice to have on hand during holidays.
- 2 sticks of butter
- 1 lb. powdered sugar
- 1 cup of graham cracker crumbs
- 1 cup smooth peanut butter
- 1 22oz. package of chocolate chips
Put the butter in a large microwave safe bowl. Microwave the butter on high until melted, about 2 to 3 minutes. Add the sugar, crumbs and peanut butter to the melted butter. Mix until smooth and press into a 8×8 microwave safe dish. Microwave the dish on high for 2 minutes. Melt the chocolate chips in the microwave, 50% for 3 to 4 minutes, stir several times while melting. Pour over the peanut butter mixture in the pan and smooth the top. Refrigerate until the chocolate is set. Cut into squares.
I like the squares thinner so I use a 13x9x2 glass pan.
