These cookies have a lemon taste and are good with hot or cold tea, or a tall glass of milk. The recipe is easy to put together before the kids get home from school and they pack well for lunches or picnics. Since it is basic cookie recipe you can add whatever you like to it.
- ½ cup of shortening
- ½ teaspoon of salt
- ½ teaspoon of lemon rind
- ½ teaspoon of nutmeg
- 1 cup of sugar
- 2 eggs, beaten
- 2 cups of flour
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- 2 tablespoons of milk
Heat the oven to 375 degrees. Have the cookie sheets handy.
Combine shortening, salt, lemon rind, nutmeg, sugar, and eggs. Sift the flour with the baking powder and baking soda. Add to the shortening mixture, add the milk and mix. Drop the cookie batter by the tablespoonful on an ungreased cookie sheet about half an inch apart. Flatten each cookie with the bottom of a glass dipped in water. Sprinkle the tops of the cookies with sugar before baking.
Bake the cookies at 375 for 10-12 minutes.
Use two baking sheets, bake one while filling the other. Do not put cookie dough on a hot baking sheet.
Nuts, dried fruit or spices can be added.
If the dough is soft enough it will work in a cookie press.
