Orange Nut Bread

This is good sweet quick bread. It is the type of bread often served at teas or luncheons. Serve it with softened cream cheese or butter mixed with honey.

  • 2 ½ cups of all purpose flour
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 1 teaspoon salt
  • ¼ cup shortening, can be part butter
  • 1 egg
  • ¾ cup milk
  • ¼ cup orange juice
  • 3 tablespoons of grated orange rind
  • 1 cup walnuts or pecans, chopped

Heat the oven to 359 degrees. Grease a 9x5x3 loaf pan.

Measure the flour, baking powder, sugar and salt into a medium mixing bowl. Whisk together or use a fork.  Cut in the shortening using a pastry blender or knifes. Beat the egg slightly and add it, the milk, orange juice and rind to the dry ingredients. Stir only until the dry ingredients are moistened. Stir in the nuts. Pour the batter into the loaf pan, smooth the top. Let stand 20 minutes.

Bake for 55 to 60 minutes in a 350 degree oven. Let stand in the pan for 5 minutes then turn out and cool on a rack. It is recommended that you wrap and store the loaf over night before slicing.

The recipe can be doubled and one loaf wrapped in foil and frozen.

Slices can be toasted in a toaster oven.
