Quick Cinnamon Bread

This is a quick fix when you want cinnamon bread. No yeast involved so there is less time spent. It was developed from a basic quick bread recipe. It’s nice to serve for a weekend breakfast. Slices can be toasted in a toaster oven or under the broiler.



  • 2 cups of all-purpose flour
  • 2/3  cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoons baking soda
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon slat
  • 1 cup buttermilk [milk plus 1 T. lemon juice]
  • 2 eggs
  • 1 teaspoon vanilla
  • ¼  cup vegetable oil


  • 3  tablespoons sugar
  • 1 or more teaspoons cinnamon
  • 3  tablespoons butter


Pre-heat oven to 350 degrees. Grease a loaf pan.

Mix the dry ingredients together and then add the eggs, milk and oil. Mix well. Pour the batter into the pan and smooth the top. Mix the topping ingredients. Sprinkle the topping over the batter and use a table knife to swirl the cinnamon mixture through the bread batter.

Bake for 55 minutes or until center tests done. Turn out of pan after 5 minutes and cool before slicing.


You can use apple butter instead of the sugar and cinnamon mixture.
