This cake will take care of a chocolate attack. Frost it with chocolate or fluffy vanilla frosting. It’s a basic cake recipe other than the addition of spices.
• 1 ½ cup of flour
• 1 teaspoon of baking soda
• ¾ teaspoon of salt
• 2/3 cup vegetable oil
• 1 cup or less of sugar
• 2 eggs
• ½ cup cocoa
• 2/3 cup of milk
• 1 teaspoon of vanilla
• 1 teaspoon of cinnamon
• 1 teaspoon of nutmeg
Heat the oven to 350 degrees. Grease a 13X9X2 inch baking pan.
Put the oil, sugar, vanilla, spices and eggs into a large bowl and mix well with a whisk. Put the flour, cocoa, salt and baking soda into another bowl and mix with a fork to combine then add to the egg and sugar mixture. Add the milk a little at a time, beating after each addition. Beat with a wooden spoon until the batter is smooth, about 25 or more strokes by hand or use a mixer.
Pour into the greased pan, smooth the top and gently drop the pan a few times on the counter to remove any large air bubbles. Bake the cake for 35 minutes. Cool completely before frosting.
Up the chocolate content and add chocolate chips.
Shave some chocolate on top of vanilla frosting.
