I used to fix this often when my kids were younger. They loved it. I don’t remember where I found the original recipe but somehow it became lost. Too many moves and other life events. So I had to recreate it from memory.
Ingredients
Main part
• 1 pound ground beef
• 1 large onion, sliced
• ½ cup chopped celery
• 2 (1 lb.) cans cream style corn
• 1 teaspoons salt
• ¼ teaspoon of pepper
• ¾ cup of water or milk
• 1 bouillon cube
Dumplings
• 1 ½ cup flour
• 1 ½ teaspoon baking powder
• ½ teaspoons of salt
• 1 egg
• 2 teaspoons chopped parsley
• 3 tablespoons vegetable oil
Directions
Brown onion and hamburger in a small amount of hot fat in a deep large pan that has a good tight lid. Add celery, 1 1/2 cans corn, 1 tsp. salt, pepper, water and bouillon. Bring to a boil.
Blend flour and the baking powder; beat in egg, remaining corn, parsley and oil. Drop by spoonfuls into hot mixture. Cook uncovered for 10 minutes, covered for 10 minutes.
Note
All you need with this is a salad. This recipe does not work correctly with regular corn.
